With a longer work commute now, I have discovered the value in mini muffins. I had written off the mini muffin before as a needless size in the muffin world. It's the perfect sized morning commute snack. Ridiculously easy to put together and bake, and a mindless mobile breakfast. Now the search for a few good muffin recipes.
